Melon and Orange Cocktail with Pomegranate Seeds

  1. To prepare the melon, firstly cut it in half and remove the seeds.
  2. Using half the melon cut out the melon balls using a melon ball scoop.
  3. If you don’t have a scoop, simply hand cut the melon into bite size pieces.
  4. Cut the remaining half of the melon into chunks and place in a food processor to create a puree.
  5. Pour some of the puree into the bottom of your serving glass and place 4–5 melon balls on top.
  6. Add a segment of orange and some orange juice.
  7. Top with crushed ice and add the pomegranate seeds.
  8. Pour over the Prosecco and stir with a straw – enjoy moderately!
