This steak recipe is a quick but delicious one to cook up on the BBQ!

1pinchBlack Pepper
1cloveGarlic
crushed
1pinchSalt
1sprigSuperValu Fresh Rosemary
2sprigsSuperValu Fresh Thyme
4 - SuperValu Quality Irish Beef Striploin
approx. 180g each
1tbspSuperValu Sunflower Oil
Grilled Vegetables
1pinchBlack Pepper
2clovesGarlic
chopped
2tbspOlive Oil
2 - Red Onion
sliced
1 - Red Pepper
sliced
1pinchSalt
2 - SuperValu Courgette
cut into thick ribbons
2tbspSuperValu Fresh Parsley

1 - Yellow Pepper

Method
Preheat the barbecue to medium heat.
Combine the garlic and herbs and sunflower oil in a bowl. Add the steak and place in the fridge for 30 minutes to marinate.
In the meantime, place the vegetables in a large bowl. Drizzle over 2 tbsp olive oil and season with salt, pepper and some paprika. Toss to coat all the vegetables. Place on the barbecue and grill for 3 - 4 minutes on each side depending on thickness and until soft enough. Remove from the barbecue and allow to cool slightly. Check the seasoning and add a drizzle of lemon juice over. Keep aside until needed covered at room temperature.
Then, add the steaks on the barbecue. Cook for 2 - 3 minutes.
To serve, place a steak on each plate with some grilled vegetables and sprinkle with some fresh herbs.
