Rocket, Garlic and Basil Pesto


I always have this in the fridge, it can be added to some many recipes from pizzas, meats, pastas and salads. The word Pesto us actually an Italian word for “Pounded” because traditionally it was made by pounding or grinding the ingredients in a Pestle and Mortar, I prefer to use my food processor.

Add all the ingredients into a food processor or puree with a hand blender until they are smooth. This pesto will last in your fridge for up to 3 weeks. Although it will darken slightly in colour it will still be delicious as the flavours will just be more mature.
