Rosscarbery Recipes
Artisan meat business, Caherbeg Free Range Pork was established by Willie & Avril Allshire in 2000. Management has passed to their sons, William & Maurice, who work alongside their team to produce a range of international award-winning Dry Cure rashers and loin bacon, Black and White Pudding, Ham and Gluten Free Sausages and Pudding under the Rosscarbery Recipes label. Everything is produced in the on-farm processing unit in Rosscarbery using locally sourced Irish pork, beef & lamb.
William completed the Food Academy course in 2014. As an 18 year old, he was probably one of the youngest to attend and complete the course. Prior to that, Willie and Avril had worked with local SuperValu stores who encouraged them to in all aspects of their product development and presentation.
William & Maurice are responsible for all aspects of the business from raw materials to production, deliveries, instore tastings, food safety, accounts, new product development and marketing. We are uniquely positioned to speak with store owners, management and staff as well as interacting with customers.
In every year that we have entered competitions, we have won an award but these are probably some of the most notable:
Rosscarbery Recipes Black and White Pudding and Gluten Free Black and White Pudding, Dry Cure Loin Rashers & Bacon Joints are part of the Food Academy. Food Academy is important for Artisan Food Producers as a product introduction and showcase. Consumers expect that products on Food Academy shelves are produced by small artisan producers like us who actually develop & manufacture.
We are involved in a number of community initiatives including sponsoring the Rosscarbery Ladies Football Club & the hugely successful annual Surf, Turf & Tar 10 km & Half Marathon in Rosscarbery.
