Rooted in the heart of beautiful County Leitrim, our family-run bakery has been proudly crafting traditional Irish Boxty for nearly four decades.
Boxty is a uniquely Irish dish, deeply woven into the food heritage of Leitrim and the North-West of Ireland. While once a local favourite, Boxty has since found fans across the country and beyond, becoming a beloved symbol of Irish culinary tradition.
We produce all three traditional varieties of Irish Boxty — Pan Boxty, Boxty Loaf, and Boxty Dumplings -each prepared using time-honoured methods and distinct processes such as baking or steaming. Every variety is made the traditional way, using authentic ingredients including freshly grated Irish potatoes, creamy mashed potato, flour, and a touch of seasoning.
In addition to our classic recipes, we’re proud to offer dietary-specific options to suit modern needs — including gluten-free Pan Boxty, light and fluffy vegan-friendly pancakes, and convenient Boxty Bites.
As proud members of Love Irish Food, we’re committed to supporting fellow Irish producers by sourcing our ingredients locally whenever possible. Our award-winning products are crafted with sustainability at heart — using over 90% real Irish potatoes, a low carbon footprint crop, and just three other ingredients. The result? Delicious, wholesome food with minimal food miles and a highly sustainable production process.
We're also honoured to be a key employer in rural County Leitrim, supporting local jobs and helping sustain our vibrant community.
