1. To make the coriander gremolata, combine the chopped coriander, garlic, lemon zest and juice. Season with salt and pepper and toss to combine. Set aside until needed.
2. In a separate large bowl, combine the vinegar, honey and mustard,
then gradually whisk in the oil. Add the baby salad leaves, cherry tomatoes, grapes and sunflower seeds and toss to combine.
3. Transfer the grape salad to a serving bowl. Sprinkle the gremolata over the salad, sprinkle over some snipped fresh chives and serve immediately.
