  1. Place the chicken is a saucepan and just cover with water.
  2. Add the diced vegetables and bring to the boil then reduce the heat and simmer for 25 minutes until the vegetables have softened and the chicken is cooked through.
  3. Puree the chicken and vegetables in a food processor using the liquid from the pan to achieve the required consistency.
  4. Add a sprinkling of freshly snipped chives before serving.
