Preheat the barbecue to medium or until the charcoal ashes turn white, oil the barbecue ridges, or drizzle some oil on a griddle pan, add the burgers. Cook on both sides for 4-5 minutes each. At the end, add your cheese to the burger so that it melts on top.
Place a sauté pan on the barbecue or over medium heat and add the streaky bacon. Cook for 2-3 minutes until well coloured and crispy. Remove the bacon from the pan and set it aside. Add butter to the same pan, crack in the 4 eggs and fry for 2-3 minutes, season to taste.
In a small bowl, combine the tomato relish and the mayonnaise, set aside. Drizzle the halved burger buns with oil and toast on the barbecue for a minute, then add the lettuce, sliced tomato, burgers, bacon and a good dollop of the tomato mayo sauce.
