This simple recipe is fun to make with the kids and perfect for a sweet treat.
Preheat the oven to 180˚C.
Line a 12-hole muffin tray with paper cases.
In a bowl, beat the butter and caster sugar together until light and fluffy.
Add the eggs and beat in for 1 min, then mix in the yogurt & vanilla extract.
Combine the flour & baking powder in a bowl, then pour over the wet ingredients.
Stir until fully combined. gently fold in the grapes.
Using 2 desserts spoons, divide the mixture between the muffin cases. Top with a few extra grapes if desired.
Bake in the oven for 15-18 minutes or until a skewer comes out clean when dipped into the muffin.
Remove from the oven. Set aside to cool for 5 minutes and gently remove the muffins from the tray. Sprinkle with icing sugar.
Serve and enjoy during the day or in school the next day!
